Castillo de Feliciana Wines
...speaking of the 2007 Semillon.
This Semillon hales from Rose Bud Vineyard in the Waluke Slope, one of Washington's premier designated grape growing areas.. The vines are over 25 years old. In this particular region the fruit reaches full ripeness at high sugar levels.To balance the wine, it was fermented and aged in 100% stainless steel and did not undergo secondary malolactic fermentation. This allowed the wine to have a more balanced acidity. The wine was sur-lee aged for 9 months to increase the wines mouthfeel and viscosity.
Pale straw color, this old vines Semillon from the Rosebud vineyards displays aromatics of apricots, honey suckle and figs. In the mouth it has bright acidity that transforms into a rich viscus mouthfeel.
Our red wines from 2007 are still in barrels and are tasting very good. Some of the preliminary tasting notes from the wines are:

Pepper Bridge Syrah: Dark berries, with notes of flint, |

cedar and tobacco on the nose. Tannins are firm with lingering on the back palate. |

Pepper Bridge Cabernet Sauvignon: Huckleberries, eucalyptus, mint and herbs. |

Rosebud Ranch Tempranillo:Raspberry preserves, espresso |

and a creamy mouth feel with loads of tannins. |
We have prepared the 2008 harvest. Our first grapes were harvested the second week of September.

2007 Pinot Grigio and 2008 Viognier
Last week we found out what bottling was really about! For two solid days we devoted out time to bottling our Pinot Grigio and Viognier. Thanks to "good working equipment" and healthy helpers the event went without a hitch. In total we bottled about 500 cases of wine. Now we have to give the wine a bit of a rest in the bottle as it does get agitated in processing. The wine goes through what the industry calls"Bottle Shock". For some wines this takes about one month to settle down and for others a bit longer. In the meantime our labels for these wines have been submitted to the "Feds" to be approved and should be sent to the printer to have the labels made up.
